Pressure cook the toor dal with turmeric and a drop of oil for 4 whistles, then mash well.
Boil the tamarind extract with kothavarangai sambar, small onions, tomato, sambar powder and salt until the vegetables turn soft and the raw smell of tamarind disappears.
Add the mashed dal, adjust the consistency with hot water and simmer for 5 minutes.
Heat gingelly oil, splutter mustard, red chillies and curry leaves, and pour this tempering over the sambar.
Garnish with coriander leaves and serve hot with rice, idli or dosai.

Always temper in gingelly oil and add a pinch of jaggery to round off the tamarind sourness.
Cool completely, store in a glass or steel container and refrigerate up to 2 days. Reheat on a low flame with a splash of water, never in a hurry.
